FROZEN STRAWBERRY MOJITO

Bank Holiday Monday is here and what better way to wrap it up than by creating your own home-made mocktail!

Yes, the sun may have been playing ‘hide and seek’  but no worries, this frozen cooler is bound to make you forget the British weather and enjoy the remainder of the long weekend.

This drink is light, refreshing and easy; and can hopefully ease some of the exam blues.

 

INGREDIENTS: Serves 2-3.

1 cup of frozen strawberries (mine were purchased from Aldi)
2 tablespoons of lime juice
1 tablespoon of sugar (optional)
1 1/2 tablespoons of honey
1-2 cups of crushed ice
10 mint leaves, roughly chopped
1/2 cup of sparkling water

Tip: If you feel you need an extra kick to make this slushy cooler a full on cocktail, just add 2-5 shots of white rum – that’ll do the trick!

Note: 1 cup should be big enough to contain 240 millilitres of water.

 

EQUIPMENT:

Blender
Tumbler glass

 

METHOD:

1) Put all the strawberries, the optional sugar, the roughly chopped mint leaves and all liquid ingredients into the blender and blitz until smooth.

2) Add the crushed ice and blend to your desired consistency (add more if necessary).

3) Pour the drink into your favourite glass.

4) Finally, bring out your inner creativity by garnishing your frozen cooler with mint leaves, a slice of lime and whatever else takes your fancy!
