The humble microwave mug cake has become very popular and is an easy and cheap way of satisfying those sweet cravings. These indulgent little treats can be made in a matter of minutes which makes it the perfect dessert for any university student. A mug cake is made using all the regular ingredients of a traditional homemade cake, it requires few pieces of equipment and measurements are typically given in spoonfuls. Here are my top five mug cakes which you will absolutely love, along with the ingredients and methods. Plus there’s barely any washing up to do!
Any of these recipes can be altered by adding another filling or topping if you wanted to make it a little more fruity or exotic. First up is the ultimate chocolate mug cake full of heavenly flavours and a smooth, delicious texture. It is the dream dessert for any student with both a sweet tooth and a tight budget.
1 slice of butter (approximately 1cm thick)
6 squares of milk chocolate
2 tbp caster sugar
½ tsp vanilla extract
4½ tbsp plain flour
½ tsp baking powder
Melt the butter and the chocolate in the microwave for approximately 30 seconds in a mug of your choice. Beat the mixture until it is smooth, then allow it to cool. Add the egg, sugar, vanilla extract, flour and baking powder. Cook in the microwave for approximately 1 minute and 30 seconds. Allow to cool before eating.
The second mud cake recipe is white chocolate and raspberry, which has a sweet and chocolatey taste. The surprising melt in the middle jam sauce adds a delicious tangy flavour and can be prepared in a few minutes.
1 slice of butter 1cm thick
8 squares of white chocolate
2 tbsp caster sugar
5 tbsp plain flour
½ tsp baking powder
(For the filling and decoration):
1 tbsp raspberry jam
Melt the butter and the chocolate in the microwave for 30 seconds. Beat the mixture until smooth, then allow it to cool. Whisk in the egg, sugar, flour and baking powder. Cook in the microwave for 40 seconds. Add the jam to the middle and cook for 50 seconds. Allow to cool and then sprinkle with the icing sugar.
Another incredible mug cake to add to the collection is the gooey salted caramel mug cake. It’s rich, decadent and very, very delicious. This one is my personal favourite!
4 tbsp flour
4 tbsp sugar
3 tbsp cocoa powder
1/4 tsp baking powder
3 tbsp milk
2 salted caramels
In a bowl add the flour, sugar, cocoa, baking powder, egg and milk, then mix until the mixture is smooth. Next pour the mixture into a regular sized mug, then drop caramels into centre of mixture. Microwave it for approximately 1 minute and 30 seconds.
For something extra sweet why not try a golden syrup mug cake? With a dollop of vanilla ice-cream, this sugar explosion is always a winner.
5 tbsp flour
2 tbsp sugar
3 tbsp milk
1 tbsp golden syrup
Mix the flour and sugar together, then add the egg and milk again mixing until smooth. Add the golden syrup to the top of the mixture, this doesn’t need to be stirred in, just allow it to sink into the mixture. Cook the mixture in the microwave for approximately 3 minutes (or until it is firm to touch and has stopped rising). Allow it to cool before serving it with vanilla ice-cream.
Just reading about this final mug cake recipe will probably leave you feeling hungry and wanting to dash out your front door to get the ingredients! The chocolate chip cookie dough mug cake (yes, you heard me right) promises to have that dreamy cookie dough flavour. Even with the warmer months ahead, no one can say no to flavoursome comfort food.
3 tbsp sugar
1/3 cup flour
1 tbsp butter
3-4 tbsp mini chocolate chips
Mix the sugar, egg, flour and butter in the cup. Add 3-4 tablespoons of mini chocolate chips. Again mix the mixture together. Microwave your cake for 1-2 minutes, until the mixture has set.
Enjoy these mud cakes with friends, a hot drink and a great film. No doubt that the easter break will provide the best excuse to raid your cupboards and give (at least one) a go!
